Baked Potato Wedges

I like potatoes in all forms, but if I had to pick a favorite, this baked version would easily be it by far.
Potatoes have been getting a bad rap in "healthy-eating" circles these days, and rather unfairly so. Potatoes are good for you as long as they're cooked in a healthy manner. For those of you who are interested in learning more, do check

I made some baked fries the other day. I usually season it in one of two ways: either using a
lemon pepper blend , or using whatever fresh herbs and spices I have on hand.

This is what I did recently.

Ingredients:
5 medium potatoes, peeled and washed
3 Tbsp olive oil
Garlic powder
Red pepper flakes
Salt
Pepper
A sprig of rosemary, chopped finely

Method:
Preheat the oven to 375 degrees F.

Slice the potatoes into even wedges and place in a large bowl with all the other ingredients. Toss well to coat the potatoes with the herb-spice mix.

Spread in a single layer on a baking sheet (I line mine with some foil and grease it for easy clean-up later) and bake at 375 degrees F until lightly browned on the bottom and tender, about 35-40 minutes. Serve hot.

I made these on Sunday, with the red chilli flakes and some zatar, and had a hard time controlling myself after eating the equivalent of two potatoes! But my temp was much lesser, will try at this temp next time.

We love our potatoes too and its unfair that they have such an undeserved bad reputation. I oven bake mine too and sweet potatoes too.

Thanks for stopping by my blog :) About the powdered buttermilk- I can never use up containers of buttermilk, and this powder is simply wonderful for baking and stays forever in the fridge. I found this at Whole Foods.

Yeah, you can try making it at this temperature, but do keep in mind that oven temperatures and settings vary.

Aparna- I am yet to try baked sweet potatoes. Very rarely do I even put them on my grocery list! :D

Thanks for the info, unfortunately no Whole Foods here.:( Midweek, I usually tend to run out of buttermilk! So these days, I've started buying 2 containers at once. I use it in a lot of SI curries/gravies.

Thanks for the baked potato wedges recipe. My husband loves wedges potato. I am going to make this tonight. I know it is testy & crispy also. although i am the big fan of any potato recipe. actually i like very much potato.I'm normally the one that will say no to wedges potato.Let's see how things turn out. thanks for the shearing your post.
