Cracked Wheat Upma

I had some cooked cracked wheat left over from making a salad for dinner and made use of it in an upma for breakfast the next day.

Ingredients:
2 cups cooked cracked wheat (prepared like
this)
½ onion, finely chopped
½ cup peas (I used the frozen ones)
7-8 baby carrots, chopped in small pieces
A handful of
dry roasted peanuts

For seasoning:
I Tbsp oil
½ tsp mustard seeds
4-5 curry leaves
3-4 green chillies, finely chopped
Salt to taste.

Method:
Heat the oil in a pan. Add the mustard seeds. When they start to pop, add the green chillies and curry leaves followed by the chopped onions. Throw in the chopped carrots and peas, and cook till the vegetables are tender.

Add the cooked cracked wheat and mix well with the vegetables. Toss in a handful of peanuts.

Serve warm.

This upma has a slightly nutty flavor and a chewy texture.
