Baked Potato Wedges

Bakedpotatowedges1

I like potatoes in all forms, but if I had to pick a favorite, this baked version would easily be it by far.
Potatoes have been getting a bad rap in "healthy-eating" circles these days, and rather unfairly so. Potatoes are good for you as long as they're cooked in a healthy manner. For those of you who are interested in learning more, do check
this out.

I made some baked fries the other day. I usually season it in one of two ways: either using a
lemon pepper blend , or using whatever fresh herbs and spices I have on hand.

This is what I did recently.

Ingredients:
5 medium potatoes, peeled and washed
3 Tbsp olive oil
Garlic powder
Red pepper flakes
Salt
Pepper
A sprig of rosemary, chopped finely

Method:
Preheat the oven to 375 degrees F.

Slice the potatoes into even wedges and place in a large bowl with all the other ingredients. Toss well to coat the potatoes with the herb-spice mix.

Spread in a single layer on a baking sheet (I line mine with some foil and grease it for easy clean-up later) and bake at 375 degrees F until lightly browned on the bottom and tender, about 35-40 minutes. Serve hot.

I made these on Sunday, with the red chilli flakes and some zatar, and had a hard time controlling myself after eating the equivalent of two potatoes! But my temp was much lesser, will try at this temp next time.

We love our potatoes too and its unfair that they have such an undeserved bad reputation. I oven bake mine too and sweet potatoes too.
Your picture looks gorgeous.

You have no idea how much I love potato wedges and french fries, but I've been trying to stay away from it lately. Love how nicely browned the edges are, temptations, temptations :)

Thyme is a lovely seasoning for wedges as well.

Oh my goodness- how did you get them so golden brown?! Those are some appetizing pics.

Thanks for stopping by my blog :) About the powdered buttermilk- I can never use up containers of buttermilk, and this powder is simply wonderful for baking and stays forever in the fridge. I found this at Whole Foods.

Prathibha, Arundathi, Rachel and Happy Cook- looks like we have a lot of potato lovers here! I'm yet to meet somebody who doesn't like 'em.:)

Sra- oooh! I've heard so much about zatar from some of the blogs. It's time I got some for myself.:)
Yeah, you can try making it at this temperature, but do keep in mind that oven temperatures and settings vary.

Aparna- I am yet to try baked sweet potatoes. Very rarely do I even put them on my grocery list! :D

Laavanya- I do too.:D Indian spices are the best!!!

Asha- with cutlets? even better! :D
I thought you were going on vacation. But I'm glad you stopped by.:)

Kitchen Flavors- thank you.:D

Ramya- thank you for the compliment.:D

Sakshi- thanks.:D I like this a lot, but I looooooove the greasy, unhealthy ones from Mc D too.:D

Kanchana- welcome back! :D LOL at your comment.
As for the pics at the bottom, you just have to add that little widget. I did not do anything else since my knowledge (of all things HTML) is non-existent!

Srikar's kitchen, inadobo, Vrinda, Lisa & Uma- thank you! :D

Sig- I know... these are not exactly SBD friendly. You know, after your inspirational posts, I have started to do a low-carb( mainly avoiding rice, and white rice at that) diet. I even got the SBD cookbook from the library recently. How are you doing? Maintaining well?

A & N- and I concur.;-D ... and thank you.:)

Suzer- I should try that too. I've only tried rosemary and potatoes since it's such a classic combo.:)

Nupur- thank you.:D
Thanks for the info, unfortunately no Whole Foods here.:( Midweek, I usually tend to run out of buttermilk! So these days, I've started buying 2 containers at once. I use it in a lot of SI curries/gravies.
Have a fun vacation! :)
