One of my recent cookbook acquisitions is World Vegetarian by Madhur Jaffrey, which has some 650+ recipes from around the world.
With the hot weather we've been experiencing over the last couple of days, it seemed like the perfect time to make something light and refreshing. I flipped through the pages of my new cookbook and came across her recipe for a soup that did not require any cooking. Just the thing I was looking for!
Here's my version of the recipe.
For 3 servings
Ingredients:
2 cups buttermilk
3 green chillies, chopped
½ - 1 tsp freshly grated ginger paste
Juice of a lemon
1 tsp cumin seeds
1/2 tsp cumin powder (prepared by dry roasting cumin seeds and grinding it using a mortar& pestle)
1 ripe avocado, chopped
Salt
Chives (for garnishing)
Method:
Throw all the ingredients together in the blender and process until smooth. Chill and serve.
We had this tangy soup along with a bean salad.

I have owned a copy of that cookbook for a few years now and it is one of my favorites. You may have noticed that I often refer to it on my blog. I've not tried this though, but I likely will this summer. Sounds perfect.
Very cool recipe and a new way to use Avocado!
even i came across this book in the library the other day.. has some very interesting recipes
Interesting dish
your pics pops up right into my mouth :) Gorgeous ones and i loved your parmesan crisps....have seen this one earlier but using it as a salsa cup was quite a brilliant one :)
This looks lovely. Can I have it hot though? It's getting cold here :-)
I love such recipes which have basically one instruction. ...throw everything in the blender.
Looks so refreshing.
That sounds really interesting and isn't something I would have thought of. Something about avocados always trips me up and gets me stuck in guacamole mode. This looks good!

Laavanya- Can u believe that H picked it up for me on one of his trips?! and I thought he didn't care!;-)
Nupur- I have been going through a little bit of the book every day since I got it. It is a good book to have, and I hope to be using it very often. I was never much of a cookbook person, but my collection is slowly growing now.:D
Bhags- why wait for summer? Some things can be enjoyed anytime!:D
Bee- I am in the process of doing just that these days maybe 'coz it's new. But I do treat some of my older cookbooks the same way you have been treating this one.:D
Mitr- Thank you for the feedback!:D
I am glad you got a chance to try it.
Vanamala- thank you.:)
Rajitha- The M&P does make life a lot simpler! :D It is not possible to grind small quantities of anything especially dry ingredients in my regular blender(yeah, I use this for everything since I have not yet purchased one of those good Indian mixers.)
I just might do an entire post on mortar and pestle grinding just for ya! ;-)
Lisa- I can see why it is a favorite!:D It does have a fabulous collection of simple and tasty recipes and is written well too. I hope you do try out the soup.:D
Mishmash- thank you! that is indeed a compliment coming from you.:D

The soup looks too good!
This looks fabulous! I heart avacados, I need to give this a shot!
Susan- thank you. I'm not too crazy about cold soups either.:D
I liked this one though, coz it tastes so much like our lassi- a cool drink that is yogurt/buttermilk based.
Sunshinemom- thank you.:)
Ranjani- In all my years here, I've never given avocados a second look. That is slowly changing now.:)
Do try it! If u like lassis, this one's perfect for u.:D
