Ingredients:
4 large potatoes, boiled & cubed
3 medium eggs, boiled & chopped(I discarded the yolks)
3/4 of a red onion, finely chopped
1 celery stick, chopped in small pieces
3 Tbsp. light mayonnaise
1-2 Tbsp. sweet relish
Salt & pepper to taste.
Method:
Combine the potatoes, eggs, onions & celery in a bowl. Add the mayo to this and mix well but be gentle! ( be careful that the boiled potato cubes don't start to crumble... I learned this the hard way! Just a little tip.... after boiling the potatoes & cooling, let them sit in the refrigerator for a little while before using.)
Add salt & pepper to taste.
Refrigerate until ready to serve.
