(Adapted from a recipe in the Everyday Food cookbook )
Ingredients:
(For 2-3 servings)
1 Tbsp olive oil
3 garlic cloves, minced
1 small onion, sliced
1 small potato, cubed
2 medium zucchini, cubed
A pinch of red pepper flakes
1 tsp roasted cumin powder (I always have a small batch of cumin seeds that have been roasted and powdered, kept in the refrigerator)
½ tsp coriander powder
Salt
Pepper
Method:
Heat the oil in a large saucepan over medium heat. Add the garlic followed by the onions, potatoes, zucchini, and the spices and seasonings. Cook until the vegetables are tender.
Add 1 ½ to 2 cups of water and bring to a boil. Puree the soup until smooth.
Simmer for a few minutes till it thickens. Serve hot.

MaryMoh- Zucchini is pretty versatile as I discovered recently- I have used it in a couple of different ways in the last few months- a soup, a gratin, some cupcakes, baked fries, and a casserole of some sort. I am beginning to love this vegetable! :)

I found this months ago and made it today. I only used 1 zucchini and added 1 cup of cooked white beans, so it was a filling lunch. Not as green and pretty, but tasty. Thanks!
